Our unique Italian twist on a breakfast classic.

Serves 4

  • 8 Slices of Herbed Polenta
  • 8 Slices of a nice Italian Ham or Procuitto
  • 8 Poached Eggs
  • Fresh Basil
  • 1/2 cup Hollandaise Sauce
  • 1 Tablespoon Butter

While your eggs are poaching, fry the Polenta slices and ham for a few minutes on each side in the butter.

Dice the fresh basil and add to the prepared hollandaise

Layer 2 slices of polenta, ham,  2 poached eggs and a generous serving of the basil hollandaise sauce for each serving.  You can also top it with a light Marinara sauce like in the picture, throw on a few brown mushrooms for a little taste of heaven,

Serve immediately.
