You will love these Yummy Gluten Free Oatmeal Cookies.

This recipe makes about 48 cookies depending on size.

In a large mixing bowl cream together:

  • 1/2 cup butter flavored Crisco or butter
  • 3/4 cup peanut butter
  • 1 1/4 Teaspoon Baking Soda
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla

Stir in:

  • 3 cups gluten free oatmeal
  • ½ cup chocolate chips
  • ½ cup sunflower seeds
  • 1/4 cup unsweetened coconut flakes
  • 1/4 raisins
  • 1/4 walnuts

Refrigerate for at least one hour or up to five days.  The un baked dough can be frozen for up to 1 month.

Spoon 1 tablespoon of cold dough on a parchment lines baking pan.

Bake for 12 to 14 minutes  at 350*
